Grape variety: Pinot Noir, Chardonnay
Region: Champagne, France
Description: Made with a solera system, with the base wine dating back to 1995, once bottled it is kept for a minimum of 5 years. It is a bright lemon-yellow colour, medium intensity. The nose is fresh and citrusy, with a distinct mineral iodine character. Medium intensity but very elegant and layered. The palate feels dry overall, but some sugars are perceptible balancing the good acidity well. Fine oily texture and bubbles, marry a crisp citrusy acidity. Gorgeously rich flavours of ripe orange and orange blossom meet delicate nuttiness and leesiness. Long and layered finish on honey-like characters with delicate bitterness and subtle phenolics for a savoury edge. A complex and layered Champagne wine with great balance, and many facets of flavours, from fruit to secondary tones, rounded in a great acidic freshness and interesting textural effects.
Food Pairing: chocolate, shellfish and white fish.
